SOME RECIPES
1. APOOPAM (RICE PANCAKE)
INGREDIENTS:
(measurements for 6-7 pancakes)
- 20 grams of Palm Jaggery
- 25 grams of Rice Flour
- 2 grams or ½ teaspoon of black pepper
- 5 grams of Cardamom
- 2 Indian Bay Leaves
INSTRUCTIONS:
Roast the rice flour in a flat pan on a low flame. To this roasted rice flour, add powdered black pepper and cardamom, and mix well. Heat jaggery in a pan with 100 ml of water and prepare a thin syrup. Add the flour mixture to it and knead well to make a soft dough. Fill the dough in cones made out of Indian bay leaf or banana leaves and steam for 10-15 minutes. Delicious pancakes are ready.
BENEFITS:
It is gluten-free and makes an alternative for those with celiac disease. A rich source of iron and several other nutrients like magnesium, potassium, and calcium. Palm jaggery positively impacts digestive health by activating enzymes and cleansing the system. Palm jaggery also helps relieve cold and cough. 2. BESAN AND SUJI PANCAKE
INGREDIENTS:
( For 4 pieces of pancakes)
- 1 cup of Besan or Gram Flour
- 2 cups of Suji/ Rawa (Semolina)
- Buttermilk as required to make the batter
- 1 Capsicum or any other vegetable of choice
- 1 onion
- 4 cloves of garlic
- 1-inch piece of Ginger
- 1 tomato
- 1 green chilli
- 1 sprig of coriander
- Ghee or oil as required
INSTRUCTIONS:
Mix gram flour and suji with buttermilk and make a batter. Rest the batter for 15 minutes. Dice the vegetables into very small pieces. Make a paste of ginger and garlic. Mix the vegetables and ginger garlic paste in the batter. Heat the pan and spread s spoonful of oil over it, pour the batter on the heated pan and spread it evenly. Once cooked from one side, flip it, and cook till the other side is done as well. Serve with any chutney of your choice or eat it plain!

2. BESAN AND SUJI PANCAKE
INGREDIENTS:
( For 4 pieces of pancakes)
- 1 cup of Besan or Gram Flour
- 2 cups of Suji/ Rawa (Semolina)
- Buttermilk as required to make the batter
- 1 Capsicum or any other vegetable of choice
- 1 onion
- 4 cloves of garlic
- 1-inch piece of Ginger
- 1 tomato
- 1 green chilli
- 1 sprig of coriander
- Ghee or oil as required

Mix gram flour and suji with buttermilk and make a batter. Rest the batter for 15 minutes. Dice the vegetables into very small pieces. Make a paste of ginger and garlic.
